Tiki Old Fashioned

When I've got whiskey on my mind in the heat of an Arizona summer, this stirred and direct cocktail always satisfies. Beginning with the traditional formula of spirit, bitters and sugar, I add in pineapple and coffee elements. These flavors are often found in tiki beverages and bring a bright, tropical twist to the Old Fashioned base. To the surprise of many, they compliment each other extremely well. The overproof rum finishes out the tiki vibe and adds a bit of proof to this sipper.
TOOLS:
INGREDIENTS: Serves 1
1½ oz Bourbon
½ oz Overproof Pineapple Rum
¼–½ oz Coffee Liqueur
½ oz Pineapple Demerara Simple syrup
3 dashes Tiki Bitters (or 1 dropper)
Garnish: 2 pineapple fronds and 3 coffee beans
DIRECTIONS:
Add all ingredients to a mixing glass with ice and stir. Strain into an Old Fashioned glass over ice and add garnish.
