Whether you’re doing Dry January, Damp January, or keeping it decidedly boozy, this drink by Beth Hutson is a breath of fresh air. She calls it “a delicate and refreshing zero proof cocktail with citrus zest and floral notes,” and it doesn’t disappoint—bright and beautiful, it's a delicious addition to happy hour whether you’re exploring non-alcoholic cocktails or adding gin.

INGREDIENTS: Serves 1
2 oz Optimist Botanicals Bright
2 oz Lemongrass Simple Syrup
1 oz Betty Buzz Meyer Lemon Club Soda
½ oz Rose Water
Crushed Ice
Edible Flowers
DIRECTIONS:
Combine crushed ice, Optimist Bright, Lemongrass Syrup and Rose Water in a shaker and shake away.
Strain mixture into coupe glass, filling halfway.
Pour Meyer Lemon soda over mixture.
Top with edible flowers.
